Mezzi rigatoni with oriental sauce

Last week I wanted to try to create a new type of sauce strong taste and very particular.

I’m not a lover of pasta, but sometimes I like to eat it. Last week I wanted to try to create a new type of sauce strong taste and very particular.

– Ingredients –

  • 2 carrots
  • 2 small eggplants
  • 200 g chard
  • 2 medium potatoes
  • turmeric
  • paprika
  • ginger
  • 2 mint leaves
  • 2 basil leaves
  • salt
  • olive oil

Peel carrots and potatoes. Cut into small pieces and place in a pot with water and salt. Cook for about fifteen minutes over medium heat. Then add the eggplant and chard which, as the rest, have been cutted into small pieces. Cook for another half hour. Finally add the mint and basil.

After cooking mix everything with an immersion blender, adding plenty of turmeric,a sprinkling of paprika and ginger. Finally pour a little oil.

For the pasta put plenty of water in a pot and bring to boil. Add the pasta and a pinch of salt. Cook for about 10 minutes.
