There are no easy recipes, indeed very easy, but we remain in the heart for a sad episode, happy, just a memory. You are wondering if I have only prepared this dish or if I have also eaten it. It’s true that tomato for me is still untouchable, but only the view of this dish makes me to tears in my eyes, and not for the tomato, but the onion. Finally I can eat the onions without feeling bad! This is the dish that I prepared in the mountains for my boyfriend who greatly appreciated.
PASTA WITH ZUCCHINI, TOMATO AND ONION
– Ingredients –
- 200g penne rigate
- 2 onions
- 1 large tomato
- 2 zucchini
- extra virgin olive oil
Wash zucchini, remove the ends and cut into small pieces. In a saucepan pour a little oil and add the zucchini.
Clean the onions and cut them into pieces. In another pan pour oil and onions.
Wash and cut tomato into small pieces. When the onions are browned add us tomato and a pinch of salt and let cook for about 15 minutes over medium heat.
Meanwhile put plenty of water in a pot and just boils, pour the pasta and a pinch of salt. Cooking it for about 10 minutes.
Drain the pasta, directly in the pot add us zucchini, tomato and onion.
