Today more than a recipe I propose an experiment. I love the chicken and eat it too often. I tried to combine different flavors to try new thing.
Baked chicken with vegetables
- 1.2 kg of yellow chicken
- 800 g of red potatoes
- 1 pepper
- 1 small eggplant
- 1 small courgette
- 2 medium carrots
- 150g pitted black olives
- bay leaves
- extra virgin olive oil
Cut the chicken into pieces without removing the skin. Peel the carrots and potatoes, cut them into pieces.
In a baking dish pour a little oil and a pinch of salt. Put the potatoes and carrots in the pan.
Wash and dice the eggplant and zucchini and add the rest to the pan. Wash and slice also the pepper. Cut olives into rounds and add them to the rest. Add the rosemary, basil, thyme and bay leaves.
With the help of a spoon turn over the vegetables in the pan. Then put the chicken pieces on vegetables.
Put some knob of butter on the chicken and some of them without exaggeration on the vegetables. Finally add a little ‘of water to cook the vegetables better.
Cooking in the oven for about one hour at 250 ° C.
