Easter is approaching and although religious or not all clamoring for the holidays.

Despite the famous proverb says: “Christmas with your family, Easter with whomever you want,” my idea is that recurrences are especially sharing. Obviously I’m not referring to “share” in meaning “social”, in fact I think the most important things are enclosed in a photo album rather than blurt half a world on a social network. Anyway, back to the next vacation, it does not matter if we spend with relatives or not, the important thing is to share the festive atmosphere with those who love you and makes you feel good.

I haven’t even thought about what I will do at Easter, my strong point are the ideas at the last moment! Anyway I found very interesting the Dalani tips on how to organize the perfect Easter brunch. When you invite someone is always undecided on what to prepare and how to set the table. In this article I could write down a number of ideas and especially the mistakes to avoid.

In particular I liked the proposal to prepare a ring-shaped cake for the occasion, a different choice than usual, because at Easter here prefers the colomba or pastiera. So I devised a ring-shaped cake that brings with it the traditional perfume. I wanted that by tasting a slice you had the illusion of eating a pastiera even if they had not. As well  you can imagine the ingredients are similar. Below I carry the recipe.

Easter ring cake

-Ingredients-

  • 100 g of hard wheat grains
  • 200 ml of milk
  • 100 ml of butter
  • 1 lemon
  • 4 medium eggs
  • 200 g of ricotta
  • 280 g of sugar
  • 400 g of flour 00
  • cinnamon powder
  • 70 g of candied citron
  • 70 g of candied orange
  • orange blossom flavouring
  • 100 ml of water
  • 16 g of yeast for cake

In a saucepan pour the grains of wheat, butter, water and milk. Cook over medium heat for about half an hour. The wheat must soften much.

In a bowl beat the eggs with the sugar, then mix the ricotta.

Add the cooked grain and candied fruit. Wash the lemon and grating the rind. Add a pinch of cinnamon.

Sift flour and baking powder and add them to the mixture.

Finally pour into the aroma.

Grease and flour the ring-shaped pan, pour the mixture and cook at 180 ° C for 50 minutes.
