Today I show you a quick, tasty and above all gluten-free recipe! The “Mini Gluten-free quiche” can be an appetizer or element of a larger buffet and fit every type of palate. For their realization I used The Buitoni Gluten-Free Brisée, which I found really great. Pasta with delicate flavor combines with all kinds of recipes.

Mini Gluten-free quiche
- 600 g of ricotta
- 1 egg
- 1 medium zucchini
- 100 g of shrimps
- 50 g of grated cheese
- The Buitoni Gluten-Free Brisée
- 1 lemon
Cut circles of brisée pastry with a diameter of about 6 cm. Insert the circles into 6 pulleys.
In a bowl combine the ricotta, cheese and egg. Grate the zucchini and the lemon peel after thoroughly washing it. Add to the compound with a pinch of salt.
Clean the shrimp and cook for 2 minutes in water previously boiled. Add a base of the compound into a spin, add some shrimp and cover it with another final layer of the compound.
Cook it all at 200 ° C for about 45 minutes.
