Today I show you a recipe very easy and quick. I tried the first time the pasta omelette on a service area on the return trip from a holiday in Calabria. I fell in love so much that, not taking off my greed, did eat 2 pieces. I remember that the pasta was cold, but very good and I ate those pieces as if they were slices of pizza.
In the recipe you find below I put the ‘nduja. For those not familiar ‘nduja it is a soft and very spicy salami typical of Calabria. The little amount that I have entered in the recipe makes the dish becomes slightly spicy.

Pasta omelette with ‘nduja
-Ingredienti-
- 200 g of spaghetti
- 2 eggs
- breadcrumbs q.s.
- 40 g of grated cheese
- 50 g of ‘nduja
- extra virgin olive oil
- salt
Cook the spaghetti in salted water, drain and let them cool.
In a bowl beat the eggs, add cheese, two pinches of salt. Cut the ‘nduja into small pieces and add it to the rest of the ingredients.
In a pan pour a little olive oil and a sprinkling of breadcrumbs. Put the spaghetti to the pan and pour the mixture of boule on all the spaghetti. Close the pan with a lid and let cook for about 3 minutes.
After helping with the lid turn the omelet. Pour again on the bottom of the pan a little oil and breadcrumbs and then turn omelet. Cook for another 5 minutes without lid. When it’s ready, it will detach from the bottom and can be cut into slices.
