– Ingredients –
- 1 kg zucchini flowers
- 400 g of flour
- 4 eggs
The zucchini flowers must be fresh and have to discard every flower that has become slightly dark. Wash them well and then drain them. Remove the stem, open a little the flowers with your fingers and remove the pistils placed inside and at the base of the flowers themselves.
In a bowl, put the eggs, a pinch of salt and whisk with the flour. Add a little water to make the batter smoother.
In a saucepan, put a generous amount of oil and put it on the fire. When the oil is hot, first dip the flowers in the batter and then dip them in oil. Remove them as soon as they become golden. Put them on a plate with blotting paper.
