Even though we are in late spring, here it seems to be in full autumn. The temperatures are still low for this period and the rains are frequent. Precisely for this reason I have thought of offering you a typical dish of the coldest period, but which you can still prepare in this period. The protagonist of this dish is potatoes.
I love potatoes and I love eating in so many ways. They are mainly known for their high carbohydrate content, but they are very important from a nutritional point of view, as they are very rich in vitamins and minerals, especially vitamin C, vitamin B12 and potassium.
Stuffed baked potatoes
Ingredients:
- 5 medium potatoes
- 4 eggs
- 100 g of diced ham
- 100 g of bacon
- grated cheese
- extra virgin olive oil
- parsley
- black pepper
- salt
Place the potatoes previously greased with oil in a pan covered with baking paper. Season the surface of the potatoes with salt and pepper. Cook them at 180 ° C for about an hour. When they are well cooked, cut the top of each potato and dig in the inside.
Combine the eliminated part inside the potatoes with the eggs, cooked ham and parsley.
Meanwhile in a pan cook the bacon over medium heat until it becomes crunchy.
Insert a strip of bacon into the potatoes, the prepared mixture, another slice of bacon and close with a little more dough.
Place a sprinkle of grated cheese on the surface of each stuffed potato. Bake at 250 ° C for about 20 minutes.
