Today I will tell of my successful experiment!

As I announced on Instagram I received from Cirio canned chopped tomatoes. The cans are wonderful! They are designed by Massimo Sirelli. Initially I didn’t want to open them to keep them intact as a reminder of my wonderful experience at the Galleria Cirio!

However I could not resist and eventually I opened them and tried to create this jam. The initial fears were to be unable to break down the acidity of the tomato or make too sweet jam so as not to feel the flavor of the tomato. The result however was excellent!

Tomato jam

  • 400 g of chopped tomatoes
  • 110 g of sugar
  • 1 lemon

In a saucepan, pour the tomatoes and add sugar. Cook over medium heat, turning occasionally.

Squeeze the lemon and keep only the juice. After 10 minutes, add the lemon juice to the pulp.

Cook up to when the pulp won’t be very dense. It will take about 1 hour. Be sure to turn constantly so that the jam doesn’t stick to the bottom of the pot.
