Lately I read the article 3 creative summer recipes and I was very impressed by the spelt salad recipe.
I love the barley and soon I plan to try to create excellent bread.
Lately, all I do is eat rice salads, and because a cold plate helps to better combat the heat and because currently I have little time.
Since I’m not going to transform myself into a grain of rice, I tried to reinvent the recipe that I found on the Dalani site.
The recipe that will illustrate below is not only rich in fibers, but also of vitamins and minerals, therefore is well suited for the summer period and and even for those who do sports.
Insalata di farro con gamberetti e melone
Ingredients for 2 people:
- 160 g of pearl barley
- 40 g raisins
- 40 g of pine nuts
- 125 g prawns
- 200 g of white melon
- 20 ml of balsamic vinegar
- salt
In a bowl, soak the raisins.
In two pots pour plenty of water and bring to a boil.
In the first add the farro and add salt to taste. Cook the farro for 10-12 minutes.
In the second pour the shrimp. Cook for a few minutes, drain and clean them.
Clean and cut the melon into cubes.
In a bowl pour the barley, raisins, previously drained, pine nuts and balsamic vinegar. Turn the entire unit so that the spelt to cool and finally add the melon.
